The upgrade stays inside one console family; Ultimate Team progress transfers across generations, while Career and most other modes do not.
FC 27 Dual Entitlement gives a PS4 buyer access to PS4 and PS5 versions, or an Xbox One buyer access to Xbox One and Xbox Series X|S versions. It does not cross from PlayStation to Xbox, and a physical upgrade requires a compatible disc-drive console.
Progress has a narrower rule. Football Ultimate Team players, items, coins, FC Points, records, and leaderboard placement move between old- and current-generation versions inside the same platform family when the same EA Account is used. Career, Clubs, Online Seasons, and other modes stay with the version where they were played.
Crossplay is also version-based. A PS5 owner running the PS4 build joins the previous-generation pool. A PS5 owner running the PS5 build joins the current-generation pool. Installing both versions does not merge those pools or their Career saves.

No. EA says Career progress is specific to the console version. Ultimate Team progress is the documented cross-generation exception within the same platform family.
